    Whisk matcha with 60ml of 75°C water until completely smooth with no lumps. Let cool for 2 minutes.

    Combine cooled matcha, coconut milk, lime juice, lime zest, and maple syrup in a cocktail shaker or jar with a tight lid.

    Add a handful of ice to the shaker and shake vigorously for 20 seconds until frothy and well chilled.

    Strain into two ice-filled glasses. Garnish with a lime wheel and a pinch of extra lime zest.

Pro tip

Full-fat coconut milk gives the best creamy texture — light coconut milk works but produces a thinner drink. Shake the can well before opening as the cream separates. For a lighter version, use coconut water instead of coconut milk and add a splash of coconut cream on top. A tiny pinch of sea salt enhances all the flavours.
