Matcha Blueberry Lemonade

Instructions

    Blend blueberries with 1 tbsp honey and a splash of cold water until smooth. Strain through a fine mesh sieve for a clear, vivid purée. Refrigerate until cold.

    Whisk matcha with 60ml of 75°C water until smooth and frothy. Stir in remaining 1 tbsp honey.

    Mix lemon juice with 1 cup cold water to make a simple lemonade.

    Fill two glasses with ice. Pour the blueberry purée over the ice, then the lemonade, then slowly pour the matcha over the back of a spoon to float on top.

    Garnish with a lemon slice and a few fresh blueberries. Stir before drinking to combine the layers.

Pro tip

Wild blueberries (smaller, more intense) make a noticeably more flavourful purée than cultivated ones — they're widely available frozen across Canada year-round. For a sparkling version, replace the cold water with sparkling water. The blueberry purée can be made ahead and kept refrigerated for up to 5 days.
