Instructions

    Whisk black sesame paste with 1 tbsp honey and a splash of oat milk until smooth. Add remaining oat milk and whisk until fully combined into a dark, creamy sesame milk. Refrigerate until cold.

    Sift matcha into a small bowl. Whisk with 60ml of 75°C water until smooth and frothy. Stir in remaining 0.5 tbsp honey.

    Fill two glasses with ice. Pour the black sesame milk over the ice — it should be a deep charcoal grey.

    Slowly pour the matcha concentrate over the back of a spoon to float on top of the sesame milk, creating a vivid green layer. Serve immediately and stir before drinking.

Black sesame paste is available at Japanese grocery stores, Asian supermarkets, and online. If you can only find whole black sesame seeds, toast them in a dry pan for 2 minutes then blend with a small amount of neutral oil until a paste forms.
