Instructions

    Combine both teas in a teapot or heatproof jug. Pour the boiling water over and steep for 5 minutes.

    Strain the tea through a fine mesh sieve (or a clean muslin cloth for the authentic "silk stocking" texture) into a clean pitcher. The tea should be very dark and strong.

    While still hot, stir in the condensed milk until dissolved.

    Let cool to room temperature, then refrigerate until cold.

    Fill tall glasses with ice. Pour the chilled tea over the ice, filling each glass two-thirds full.

    Pour the evaporated milk over the back of a spoon to create a layered effect. Stir before drinking.

Pro tip

The blend of Ceylon and Pu-erh (or Assam) is key to the authentic flavour — Ceylon alone is too bright, Pu-erh alone too earthy. Straining through a fine cloth rather than a metal sieve gives a noticeably silkier texture. Adjust the condensed milk to your preferred sweetness level.
