Instructions

    Place the gyokuro leaves in a small jar or glass pitcher. Pour the cold water over and stir gently.

    Cover and refrigerate for 8 hours. Gyokuro is naturally sweet and umami-rich — the cold brew process extracts these qualities while leaving bitterness behind.

    Strain through a fine mesh sieve into a clean pitcher. Press the leaves very gently — do not squeeze hard or you will extract bitterness.

    Serve immediately over ice. Gyokuro cold brew is best enjoyed the same day it is made.

Pro tip

Gyokuro is expensive — treat it accordingly. Use filtered or spring water; tap water with chlorine will dull its delicate flavour. Do not add sweetener on the first sip — gyokuro cold brew has a natural sweetness and umami depth that sweetener will mask. A lemon slice is optional; purists drink it plain.
