Instructions

    Steep the green tea in 80°C water for 2 minutes. Strain immediately and let cool completely. Do not use boiling water — it will make the green tea bitter.

    Make the peach ginger syrup: combine the chopped peaches, ginger, honey, and water in a small saucepan. Simmer over medium heat, mashing the peaches until soft and syrupy, about 8 minutes. Strain through a fine mesh sieve, pressing firmly. Stir in the lemon juice. Let cool.

    Combine the cooled green tea, peach ginger syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

    Serve over ice with a thin peach slice.

Pro tip

Very ripe, fragrant peaches give the best syrup — underripe peaches produce a flat, starchy result. Nectarines work equally well. The 80°C brewing temperature is important for green tea — boiling water extracts bitter compounds that overwhelm the delicate peach flavour. For a more pronounced ginger flavour, increase to 1.5 inches of ginger in the syrup.
