Instructions

    Steep the green tea in 80°C water for 2 minutes. Strain immediately and let cool to room temperature.

    Add the cucumber slices to the cooled tea and refrigerate for at least 30 minutes to allow the cucumber to infuse.

    Strain out the cucumber. Stir in the lime juice, honey, and cold water.

    Serve over ice with fresh cucumber slices and a lime wheel.

Pro tip

English (seedless) cucumber gives the cleanest flavour — regular cucumber works but has a slightly more pronounced skin flavour. The cucumber infusion step is key: 30 minutes gives a subtle freshness, 2 hours gives a more pronounced cucumber flavour. Jasmine green tea is a beautiful variation here — the floral notes pair wonderfully with cucumber and lime. A few fresh mint leaves added with the cucumber take this in a mojito-adjacent direction.
