    Steep the genmaicha in 80°C water for 2 minutes. Do not over-steep — the green tea component turns bitter quickly.

    Strain immediately into a pitcher. Stir in honey if using while still warm.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice. Garnish with a pinch of toasted sesame seeds if desired — it amplifies the nutty character beautifully.

Pro tip

Genmaicha is available at most Asian grocery stores and specialty tea shops. The toasted rice gives it a popcorn-like aroma that is completely unique. For a cold brew version, use 5 tsp of genmaicha in 4 cups of cold water and refrigerate for 8 hours — the cold brew version is even smoother.
