    Steep Earl Grey bags in 1 litre of boiling water for exactly 4 minutes. Over-steeping makes Earl Grey bitter and soapy — set a timer.

    Remove bags without squeezing. Stir in honey while the tea is still warm so it dissolves fully.

    Add lemon juice and stir. Let cool to room temperature, then refrigerate for at least 1 hour.

    Serve over ice in tall glasses with a lemon wheel. The bergamot aroma is most pronounced when the tea is very cold.

Loose-leaf Earl Grey from a quality tea shop makes a noticeably better iced tea than supermarket bags — the bergamot oil is fresher and more vibrant. Try a London Fog variation: add 2 tbsp of cold milk or oat milk per glass and a tiny pinch of vanilla. For a lavender Earl Grey, add 1 tsp of dried culinary lavender to the steep.
