Instructions

    Steep the Darjeeling in 85°C water for 3 minutes. Darjeeling is delicate — boiling water and over-steeping will destroy its floral character.

    Strain immediately into a pitcher. Stir in the honey while still warm.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice with a lemon twist. Express the lemon peel over the glass before dropping it in to release the citrus oils.

Pro tip

Second flush Darjeeling (harvested May–June) has the most pronounced muscatel character and is ideal for iced tea. First flush is more delicate and floral. Use a light, floral honey — a strong honey like buckwheat will overpower the tea's subtle notes. This is one recipe where quality of the leaf makes a real difference.
