Instructions

    Steep the oolong tea in 85°C water for 3 minutes. Do not use boiling water — it will make oolong bitter. Remove the tea and let cool.

    Make the brown sugar syrup: combine brown sugar and 2 tbsp hot water in a small bowl. Stir until fully dissolved. Let cool.

    Fill two tall glasses with ice. Drizzle the brown sugar syrup down the inside of each glass for a caramel swirl effect.

    Pour the cooled oolong tea over the ice.

    Top with a splash of milk or oat milk if desired. Stir gently and serve immediately.

Pro tip

Use a thermometer to hit 85°C — oolong is temperature-sensitive and turns astringent when over-brewed. Drizzle the brown sugar syrup on the glass walls before adding ice for a beautiful caramel stripe effect. For a boba version, add cooked tapioca pearls to the bottom of the glass before the ice.
