Instructions

    Steep the Assam tea in boiling water for 4 minutes. Assam is robust — a full 4 minutes gives the malty depth that makes this recipe work.

    Strain into a pitcher. Stir in honey if using while still warm.

    Add the cold water and let cool to room temperature. Refrigerate until fully chilled.

    Serve over ice with a lemon wedge. Squeeze the lemon in just before drinking.

Pro tip

Assam is the tea that makes most commercial iced tea blends taste good — it has the body and malt to stand up to ice and dilution. Second flush Assam (harvested May–June) has the most pronounced malty character. This is also the base for a great iced milk tea — just add a splash of whole milk or oat milk.
