    Steep the green tea bags in 80°C water for 2 minutes. Remove bags and let cool.

    Blend the watermelon cubes until smooth. Strain through a fine mesh sieve to remove pulp and seeds. You should have about 2 cups of juice.

    Combine the cooled green tea, watermelon juice, lime juice, and basil leaves in a pitcher. Stir well.

    Refrigerate for at least 1 hour to let the basil infuse. Taste and add honey if needed.

    Strain out the basil leaves. Serve over ice with a small watermelon wedge on the rim.

Pro tip

Seedless watermelon makes blending much easier. For a more intense basil flavour, lightly muddle the basil leaves before adding them to the pitcher. This drink is best consumed within 24 hours — watermelon juice separates and loses its vibrancy quickly.
