    Steep the tea bags in boiling water for 4 minutes. Remove bags and let cool to room temperature.

    Muddle the strawberries in a large pitcher until broken down and juicy.

    Add the lemon juice and simple syrup to the muddled strawberries. Stir well.

    Pour the cooled tea and cold water into the pitcher. Stir to combine.

    Refrigerate for at least 1 hour. Strain through a fine mesh sieve if you prefer a clear drink, or leave the strawberry pulp in for more flavour.

Use ripe, in-season strawberries for the deepest colour and sweetest flavour. For a sparkling version, replace the cold water with sparkling water and add it just before serving. This keeps refrigerated for up to 3 days — the colour deepens beautifully overnight.
