Instructions

    Steep the hibiscus flowers in boiling water for 8 minutes. Strain and discard the flowers. Let cool slightly.

    Muddle the strawberries in a pitcher until broken down and juicy.

    Pour the warm hibiscus tea over the muddled strawberries. Stir in the honey and lime juice.

    Add the cold water. Strain through a fine mesh sieve if you prefer a clear drink, or leave the strawberry pulp in for a more rustic, textured version.

    Refrigerate until cold. Serve over ice with a whole strawberry on the rim.

Pro tip

The hibiscus and strawberry are both naturally tart — taste before adding all the honey and adjust to your preference. For a party punch, double the batch and serve from a large glass dispenser with floating strawberry slices and ice. This is also excellent topped with a splash of sparkling water.
