Instructions

    Lightly bruise the spearmint leaves and place in a heatproof pitcher with the lime zest.

    Pour the boiling water over and steep for 7 minutes. Strain through a fine mesh sieve.

Pro tip

Spearmint has about half the menthol of peppermint, giving it a sweeter, more rounded flavour that many people prefer in cold drinks. The lime zest added during steeping gives a more integrated citrus flavour than lime juice alone — use both for the best result. For a sparkling version, top each glass with a splash of sparkling water just before serving.
