Instructions

    Steep the black tea in boiling water for 4 minutes. Strain and let cool completely.

    Make the plum syrup: combine the chopped plums (skins on), sugar, and water in a small saucepan. Simmer over medium heat, stirring and mashing the plums until they break down and the syrup turns deep burgundy, about 10 minutes.

    Strain through a fine mesh sieve, pressing firmly to extract all the liquid and colour from the skins. Stir in the lemon juice. Let cool.

    Combine the cooled tea, plum syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

    Serve over ice with a thin plum slice.

Pro tip

Leaving the skins on the plums is essential — they contain most of the colour and a significant amount of the flavour. Red or black plums give the deepest colour; yellow plums give a lighter, more golden syrup with a milder flavour. Very ripe plums are key — underripe plums produce a tart, astringent syrup. A small pinch of cinnamon or star anise added to the syrup while simmering gives a lovely spiced depth.
