Pineapple Ginger Iced Tea

Instructions

    Combine the rooibos tea bags and ginger slices in a heatproof pitcher. Pour boiling water over and steep for 7 minutes.

    Remove the tea bags. Leave the ginger in to continue infusing as the tea cools.

    Once cool, strain out the ginger. Stir in the honey if using.

    Add the pineapple juice and lime juice. Stir well and refrigerate until cold.

    Serve over ice with a pineapple wedge on the rim.

Pro tip

Fresh ginger gives a much brighter, more vibrant heat than ground ginger — do not substitute. For a stronger ginger kick, add the slices to the cold pitcher and let them infuse overnight. This is also excellent with coconut water in place of half the pineapple juice.
