Instructions

    Steep the white tea in 75°C water for 3 minutes. Strain and let cool completely. White tea is delicate — do not use boiling water.

    Make the pear ginger syrup: combine the chopped pears, water, honey, and ginger in a small saucepan. Simmer over medium heat, stirring and mashing the pears until soft and syrupy, about 10 minutes.

    Strain through a fine mesh sieve, pressing firmly. Stir in the lemon juice. Let cool.

    Combine the cooled white tea, pear ginger syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

Pro tip

Bartlett (Williams) pears give the most fragrant, sweet syrup. Asian pears give a crisper, more subtle flavour. Very ripe pears are essential — underripe pears produce a bland, starchy syrup. The pear ginger syrup keeps refrigerated for up to 10 days and is also excellent in sparkling water or drizzled over yoghurt. For a more pronounced ginger flavour, increase to 1.5 inches of ginger.
