Instructions

    Steep the green tea bags in 80°C water for 2 minutes. Remove bags immediately and let cool.

    If using whole passion fruits, press the pulp through a fine mesh sieve to extract the juice. Discard the seeds (or leave some in for texture and visual appeal).

    Combine the cooled green tea, passion fruit juice, honey, lime juice, and cold water in a pitcher. Stir well.

    Taste and adjust sweetness — passion fruit is intensely tart.

    Refrigerate until cold. Serve over ice with a halved passion fruit on the rim.

Pro tip

Ripe passion fruits are wrinkled and heavy for their size — smooth-skinned ones are underripe and lack flavour. Frozen passion fruit purée (available at Latin and Asian grocery stores) is an excellent year-round substitute. Leave a few seeds in the drink for a beautiful visual effect and a pleasant crunch.
