Instructions

    Steep the green tea bags in 80°C water for 2 minutes. Add half the mint leaves to the hot tea and steep for an additional 2 minutes. Remove bags and strain out the mint.

    Stir in the simple syrup while the tea is still warm. Let cool to room temperature, then refrigerate until cold.

    In a large pitcher, combine the chilled mint tea and lime juice. Stir well and taste for sweetness and tartness.

    Lightly muddle the remaining fresh mint leaves in the bottom of each glass (press gently with a spoon — don't shred them).

    Fill glasses with ice and pour the tea over. Top each glass with a splash of sparkling water.

    Garnish with a lime slice and a fresh mint sprig. Serve immediately.

Pro tip

Don't over-muddle the mint — bruising it gently releases the oils without making it bitter. Use Persian limes for the best flavour; key limes are more aromatic but very tart. For a party punch, skip the sparkling water and serve from a large pitcher — add the sparkling water to individual glasses.
