Pro tip

Lemon balm (Melissa officinalis) is incredibly easy to grow in a pot on a windowsill or balcony — once established it produces abundantly all summer. Fresh lemon balm has a brighter, more complex flavour than dried. It pairs beautifully with chamomile for a deeply calming blend. Lemon balm is traditionally used to reduce anxiety and promote sleep.
