Instructions

    Combine the hibiscus flowers and sliced ginger in a heatproof pitcher. Pour the boiling water over and steep for 8 minutes.

    Strain through a fine mesh sieve into a clean pitcher. Discard the hibiscus and ginger.

    Stir in the honey and lime juice while still warm. Taste and adjust — the hibiscus is very tart and the ginger is spicy.

    Let cool to room temperature, then refrigerate until cold.

    Serve over ice with a lime wedge and a thin ginger slice.

Pro tip

Fresh ginger gives a much brighter, more vibrant heat than ground ginger. For a milder version, reduce the ginger to 1 inch. For a spicier version, add a small slice of fresh chili alongside the ginger. This drink is also excellent served warm as a cold-weather alternative — just skip the ice and serve in a mug.
