Instructions

    Steep the tea bags in boiling water for 4 minutes. Remove bags and let cool completely.

    Make the fig syrup: combine the chopped dried figs, water, and honey in a small saucepan. Bring to a simmer over medium heat, stirring and pressing the figs until they break down into a thick, jammy syrup, about 8 minutes.

    Strain through a fine mesh sieve, pressing firmly to extract all the syrup. Stir in the lemon juice. Let cool.

    Combine the cooled tea, fig syrup, and cold water in a pitcher. Stir well and refrigerate until cold.

    Serve over ice with a fig half on the rim.

Pro tip

Dried Black Mission figs give the deepest, most complex flavour here. Dried Turkish figs are milder and sweeter. The fig syrup keeps refrigerated for up to 2 weeks and is also excellent stirred into sparkling water, drizzled over yoghurt, or used as a glaze for roasted meats. A pinch of cinnamon added to the syrup while simmering is a lovely variation.
