    Place the dried elderflowers in a heatproof pitcher. Pour the boiling water over and steep for 7 minutes.

Pro tip

Dried elderflowers are available at health food stores and specialty tea shops. Do not over-steep — beyond 10 minutes the flavour can turn slightly bitter. For a sparkling elderflower iced tea, top each glass with a splash of sparkling water just before serving. A few drops of elderflower cordial (St-Germain) can intensify the flavour if desired.
