Instructions

    Combine elderberries, ginger slices, cinnamon stick, and 750ml of water in a medium saucepan. Bring to a boil, then reduce heat and simmer uncovered for 15 minutes.

    Remove from heat and let steep for 5 minutes. Strain through a fine-mesh sieve into a pitcher, pressing the berries firmly to extract all liquid.

    While still warm, stir in honey until dissolved. Add lemon juice and stir.

    Add the remaining 250ml of cold water to the pitcher. Stir and taste — adjust sweetness with more honey if desired.

    Refrigerate until cold, at least 1 hour. Serve over ice with a lemon wheel and a few fresh ginger slices.

Pro tip

Dried elderberries are available at health food stores and online. Never consume raw elderberries — always cook them first. This tea keeps refrigerated for up to 4 days.
