Instructions

    Place the dried echinacea in a heatproof pitcher. Pour the boiling water over and steep for 10 minutes — echinacea needs a longer steep than most herbs.

    Strain through a fine mesh sieve into a clean pitcher. Stir in the honey and lemon juice while still warm.

    Let cool to room temperature, then refrigerate until cold.

Echinacea has a mild, slightly earthy and floral flavour that is easy to drink — it is not as strongly flavoured as some wellness herbs. Honey and lemon are the classic pairings and genuinely improve the flavour. Echinacea purpurea (the purple coneflower) is the most widely available and mildest in flavour. Find dried echinacea at health food stores or online. Best enjoyed at the first sign of a cold.
