Instructions

    Steep tea bags in 1 litre of boiling water for 3 minutes (green tea turns bitter quickly — don't over-steep). Remove bags.

    While still warm, stir in honey until dissolved. Add mint leaves and let steep in the warm tea for another 10 minutes.

    Strain out mint leaves. Add cucumber slices and lime juice to the pitcher.

    Refrigerate for at least 2 hours — the cucumber infuses gently as it chills. Serve over ice, garnished with fresh cucumber rounds and a mint sprig.

Pro tip

Leave the cucumber skin on for a more vibrant green colour and extra freshness. For a stronger cucumber flavour, muddle a few slices before adding them. White tea makes a more delicate, floral version if you want something lighter. This tea is best consumed within 24 hours — cucumber can turn slightly bitter if left too long.
