    Steep the green tea in 80°C water for 2 minutes. Remove the bags and let the tea cool to room temperature.

    Stir in the elderflower cordial and honey until dissolved.

    Add half the cucumber slices to the pitcher. Refrigerate for at least 1 hour to infuse.

    Fill glasses with ice and fresh cucumber slices. Strain the chilled tea over the ice.

    Garnish with a sprig of fresh mint and serve immediately.

Pro tip

Elderflower cordial is available at most grocery stores — St-Germain liqueur works as a non-alcoholic substitute. Don't over-steep the green tea or it will turn bitter and overpower the delicate elderflower. For a sparkling version, top each glass with a splash of sparkling water.
