Instructions

    Combine the dried apple pieces, cinnamon sticks, and cloves in a medium saucepan. Add the boiling water and bring to a gentle simmer over medium heat.

    Simmer for 10 minutes, then remove from heat and steep for a further 10 minutes.

    Strain through a fine mesh sieve into a pitcher. Discard the solids.

    Stir in the honey and lemon juice while still warm. Let cool to room temperature.

    Refrigerate until cold. Serve over ice with a thin apple slice and a cinnamon stick.

Pro tip

Dried apple gives a more concentrated flavour than fresh — look for unsweetened dried apple rings at health food stores. For a deeper spice profile, add a star anise and a few cardamom pods. This is also wonderful served warm in autumn and winter.
