    Steep the tea bags in boiling water for 4 minutes. Remove bags and let cool slightly.

    Muddle the blueberries and mint leaves together in a pitcher until the blueberries are broken down and the mint is bruised.

    Pour the warm tea over the muddled blueberries and mint. Stir in the honey and lemon juice.

    Add the cold water. Strain through a fine mesh sieve if you prefer a clear drink, or leave the pulp in for a more rustic version.

    Refrigerate until cold. Serve over ice with fresh blueberries and a mint sprig.

Pro tip

Frozen blueberries work just as well as fresh and are available year-round. Muddling the mint with the blueberries rather than adding it separately gives a more integrated flavour. For a sparkling version, top each glass with a splash of sparkling water just before serving.
