Instructions

    Steep the tea bags in boiling water for 4 minutes. Remove bags and let cool completely.

    Combine the blueberries, lavender, sugar, and water in a small saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves and the blueberries burst, about 5 minutes.

    Remove from heat and let steep for 10 minutes. Strain through a fine mesh sieve, pressing the solids to extract all the syrup. Discard the solids.

    Stir the lemon juice into the blueberry lavender syrup.

    Combine the cooled tea and syrup in a pitcher. Stir well and refrigerate until cold.

    Serve over ice, garnished with fresh blueberries.

Pro tip

The syrup can be made up to a week ahead and kept refrigerated — it also makes an excellent addition to lemonade or sparkling water. Use culinary-grade lavender only; ornamental varieties can be bitter. For a deeper colour, add a small pinch of butterfly pea flower powder to the syrup.
