Blackberry Iced Tea

Wild blackberries ripen along Canadian roadsides and forest edges every August and September — this recipe is built around that harvest moment. A simple blackberry syrup made from fresh or frozen berries gives the tea a deep purple-black hue and a jammy, slightly tart sweetness that no artificial flavouring can replicate.     Make the blackberry syrup: combine blackberries, sugar, and 2 tbsp water in a small saucepan over medium heat. Mash the berries as they warm and simmer for 5 minutes until jammy. Strain through a fine mesh sieve, pressing firmly. Discard solids and let syrup cool.

    Steep tea bags in 750ml boiling water for 4–5 minutes. Remove bags and let cool to room temperature.

    Combine cooled tea, blackberry syrup, and lemon juice in a pitcher. Stir well and taste — add more syrup for sweetness or lemon for tartness.

    Refrigerate until fully chilled, at least 1 hour. Serve over ice with fresh blackberries and a lemon slice.

Pro tip

Frozen blackberries work just as well as fresh for the syrup — they're often more flavourful since they're picked at peak ripeness. If you're lucky enough to have wild blackberries, use them: the flavour is more intense and complex than cultivated varieties. The blackberry syrup keeps in the fridge for up to 2 weeks and is also excellent in sparkling water or cocktails.
