    Combine the white tea leaves and dried apricot halves in a large jar or pitcher. Pour the cold filtered water over.

    Stir gently, cover, and refrigerate for 8–10 hours. The apricots will plump up and infuse the water with a gentle stone-fruit sweetness.

    Strain through a fine mesh sieve into a clean pitcher. Taste before adding honey — the apricots may have sweetened it sufficiently.

    Serve over ice with a fresh or dried apricot slice.

Pro tip

Use unsulphured dried apricots (the dark brown ones, not the bright orange ones) — they have a more complex, less artificial flavour. The plumped apricots left in the strainer are delicious eaten as a snack or chopped into yoghurt. For a warm-weather variation, add a few fresh thyme sprigs to the cold brew jar — thyme and apricot is a wonderful combination.
